Easy Fish Supper

This is a super easy dish to knock up when the kids are draining your soul but your wife wants dinner. The kids had fish fingers and chips but to be honest I think they would have liked this. Maybe next time I’ll let them eat the good stuff with mummy and daddy. Maybe.
Maybe not.

INGREDIENTS

Any frozen dfish pieces, cod, sea bass etc. I used basa. Very cheap. 1 piece per person.
Fennel X1
Red pepper X1
Small onion X1
Lemon X1
Fresh sage X1
Fresh parsley X1
Garlic
Olive oil or butter.

METHOD

1. Slice the pepper, fennel, onion and garlic and gently fry in a little oil for 5 minutes or until soft.

2. Cut a 10″ square piece of foil per person and spoon the veg equally. Lay the frozen fish on with a glug of oil. Put a few sage/bay leaves in and loosely make a parcel. Place in the oven at 190 for 25 minutes.

3. After 25 minutes open the parcels and sprinkle some parsley or chopped fennel tops then a squeeze of lemon and serve in the parcel.

I made chips and broccoli which went well with this dish.
